The Spirit of Provence

Pastis is the anise-flavoured spirit of Provence, the quintessential aperitif of the south of France. Diluted with cold water, it turns a milky, opalescent yellow — the famous louche effect — and fills the air with the scent of anise, liquorice, and Provençal herbs. It is the taste of a summer afternoon in a village square.

REGION

Produced throughout France, but most associated with Marseille and Provence. The two great brands — Ricard and Pernod — are both from Marseille.

PRODUCTION

Made by macerating star anise, liquorice root, and Provençal herbs in neutral spirit, then sweetening and diluting to bottling strength (typically 40–45% ABV). The louche effect occurs when water is added, causing the anise oils to precipitate.

CLASSIFICATIONS

  • · Standard Pastis: 40–45% ABV, served 1:5 with cold water
  • · Pastis de Marseille: must contain star anise and liquorice
  • · Artisanal Pastis: small-batch, herb-forward expressions
